- Xanthophylle (von altgr. ξανθός xanthós „gelb“ und φύλλον phyllon „Blatt“) sind neben den Carotinen die zweite wichtige Gruppe der Carotinoide. Die Xanthophylle sind – ähnlich wie die Carotine auch – meist Tetraterpene, enthalten aber sauerstoffhaltige Gruppen in Form von Hydroxy- (-OH), Carbonyl- (-C=O) und Carboxygruppen (-COOH) sowie seltener auch von Oxirangruppen.
