Taurin oder 2-Aminoethansulfonsäure ist eine organische Säure mit einer Sulfonsäuregruppe und enthält eine Aminogruppe. Als Aminosulfonsäure und da es keine Aminocarbonsäure ist, kann Taurin keine Peptide bilden; es entsteht aber im Stoffwechsel als Abbauprodukt der Aminosäuren Cystein und Methionin.
